As darkness descends on the Indian highway, burly truck drivers stop for refreshments at the Dhabas (roadside eateries) that dot the arid stretch. Plates laden with savouries like samosas and pakodas disappear with the hot cups of chai, a staple of their rugged, nomadic existence. Dhaba chai is replenishing and energizing. It has a zest and full-bodied flavour which washes away the cares of a gruelling day on the road.
Directions (6oz, 180ml)
Add two parts water (4oz, 120ml) to one part milk (2oz, 60ml) and bring to a boil. Then add 1 tsp of tea and 1 tbsp sugar. Stir and simmer for 2 to 3 minutes, till coppery brown. Strain.
